BBQ ComPITition

The Chillin’ and Grillin’ BBQ Cook Off is a partnership between the Concerned Citizens for the Development of North Fontana - an historic local civil rights organization, the Fontana Police Officers Association and the City of Fontana.

The event is all about “UNITY in CommUNITY” specifically helping the greater Fontana area of the Inland Empire continue to come together to keep us all safe from crime and the fear of crime.

The purpose is to continually increase trust and communication with the police and the community resulting in the removal of barriers and misunderstanding.

We are building trust and personal relationships through events like this which are as simple and as Biblical as “breaking bread” together.

Public safety is a partnership between peace officers, fire fighters, paramedics and the community they serve.

Community safety is improved when people better understand how and why first responders do what they do. In order to explain that, first, people have to trust each other.

The outcome is building on the positive relationships we already have in order to help make Fontana and the greater Inland Empire a better and more prosperous place to live, work and play.

The Harvard Business Review recently reported that preparing and sharing a casual meal helps build comradely. We see the Barbecue Competition as just that - building comradely.

For us that means trust, communication and collaboration.

The event will be Saturday, September 18, 2021 from 11 AM to 3 PM at the Jesse Turner – Fontana Park’s Sports Pavilion located at 15556 Summit Avenue in Fontana.

Competitors come from the community and include employee associations from the police, fire and schools. They vie for a total of $1500 in prize money which they use for charitable purposes.

At last year’s event the there were vendors, games and activities for kids, first responder emergency vehicles including a SWAT truck, historic police and fire vehicles, current police and fire vehicles, a beam from the World Trade Center, public safety demonstrations and live entertainment.

The Fontana Chamber of Commerce, Fontana Rotary Club, Fontana Women's Club and Fontana Exchange Club as well as numerous local businesses are all supporters of this community event.

What’s it about?

The Chillin’ N Grillin’ BBQ Cook Off is a partnership between the Concerned Citizens for the Development of North

Fontana, the Fontana Police Officers Association and the City of Fontana.

The purpose of the event is to support and sustain “UNITY in CommUNITY,” It is all about building trust-based relationships

with our communities. Our goal is to help the greater Fontana area to continue to come together to keep us all

safe from crime and the fear of crime.

The focus is to break down barriers and misunderstanding by building trust and personal relationships though communication

and an event as simple and as Biblical as “breaking bread” together.

Set up and Logistics

On Friday, September 17, 2021 starting at 6:00 PM - you will be able to set up your barbecue equipment, obtain the

meat so you can prepare it the way you want for the cook off.

If you are going to camp out, you can set-up your trailer, camper or RV.

WHERE TO SET UP YOUR BARBECUE

You will be preassigned an area to set up your barbecue. Your team name and your area will be written in chalk on the

concrete. The barbecue area will be on the concrete roadway/sidewalk between the Sports Pavilion (giant tent) and

the swimming pool. The roadway/sidewalk was constructed to accommodate fire trucks so it can accommodate your

trucks and trailers and other equipment.

EQUIPMENT

You will need to provide your own grill and/or smoker, cooking utensils including knives, tongs, spatulas, cutting

boards, clean-up spray, towels, sanitary gloves, serving trays, chafing dishes, and of course your secret recipes, sauces,

rubs, spices.

We recommend you bring a work table and at least one easy-up for outside and one easy-up or signage for inside.

Tables and chairs will be provided inside the Sports Pavilion for serving.

You will prepare the food outside of the Sports Pavilion but the attendees will sample the food inside the Sports

Pavilion.

You will need one team member to take the food from the barbecue pit into the Sports Pavilion where the food will be

served. You will need one team member to serve the food inside the Sports Pavilion.

We will provide tables and chairs inside the Sports Pavilion for serving. Tables and chairs will NOT be provided for your

outside work station. You should supply signage for the serving area denoting the name of your team.

We will NOT supply serving trays or chafing dishes.

Water is NOT available on-site. If you do not have a self-contained unit with fresh water and sink you should bring a

portable cleaning station. As an example, you can bring a large igloo type water container with on/off valve along with

soap and a basin to capture the gray water.

Inside the Sports Pavilion we will provide paper plates, utensils and napkins for the attendees.

Drinking water and other beverages will be sold inside by the organizing committee.

There are rest rooms near-by but they are the standard stainless-steel institutional facilities.

MEAT PREPARATION

We will be provide you with the meat for the competition. We estimate 500 people will attend and we will provide you

a sufficient amount of meat based on that figure. We provide the meat to ensure that everyone uses the same quality

and grade of meat. We trust that you will use only the meat provided to you. Failure to do so will result in

disqualification from the contest.

Your food presentations need to be ready by 11:00 AM when the doors open to the public and the judging begins. You

can begin barbecuing Friday afternoon. That is why camping overnight may be a good option for you.

CAMPING

If you decide to camp overnight here are no hook ups. It is dry camping on the parking lot. We ask that you respect the

fact that it is a city park and conduct yourselves accordingly as representatives of your agency and or association. No

fires on the ground and kindly pick up any litter or debris.

GENERATORS AND OTHER EQUIPMENT

Electricity is not available in the event area, however the area is well lit. Because you will cook in close proximity to the

crowd and music only inverter generators will be allowed and the use of all generators must be pre approved.

It is recommended that you have a canopy cover for your barbecue equipment. We ask that you place a tarp or mat

under the food prep area to keep the concrete surface free from stains and grease. We expect you to clean up any

spills. Some of you may know that from time to time the wind blows very hard in Fontana. Therefore we ask that your

easy-ups, canopies, tents and floor mats are secured and weighted down.

You will supply all other food handling and safety requirements including plastic gloves, hair nets, fire extinguishers,

etc. The County Health Department is expected to be there and conduct inspections for proper use.

After the event is concluded all barbecues, materials, vehicles and trash must be removed by 4:30 PM.

What is the menu?

You will be asked to prepare two categories of meats which are pork ribs and chicken. The meat will be provided to you

sometime after 6:00 PM on Friday, September 17, 2021.

Awards and Prizes

There will be a $500 cash award for first place in the barbecue rib competition and $250 for second place.

There will be a $500 cash award for first place in the barbecue chicken competition and $250 for second place.

Mandatory County Health Permit

You must obtain a San Bernardino County Health Permit and have it on hand at the event for inspection. It is possible

that the county may waive the fee if you are a governmental agency. You can complete the application for the permit

Commitment

By paying the registration fee, you understand and agree to the expectations of contestants for the BBQ event. You will

notify us of any changes to the information submitted in this application.
